Eggs are among the most complete foods in the diet. They provide high-quality proteins, vitamins and minerals, and they are a fundamental ingredient in countless recipes. Yet, questions continue to linger about their storage, cleaning, and purchase. In recent Instagram posts, chef Jordi Cruz and influencer Blancanutri have shared some recommendations to get the most from them and to use them safely.
Fridge or room temperature?
One of the most common debates is whether eggs should be kept in the refrigerator or at room temperature. Jordi Cruz explains that cold storage can help extend their shelf life, but he recalls that the shell is protected by a thin natural layer, known as the cuticle or “bloom,” which acts as a barrier against the entry of bacteria.
According to the chef, rapid changes in temperature and the condensation that can occur when taking eggs in and out of the fridge could damage that protection. Therefore, he stresses avoiding unnecessary handling and maintaining stable storage conditions.
When should eggs be washed?
Another frequent question concerns cleaning. The chef recommends not washing the eggs right after purchase, but doing so only just before use. For this, water is enough, and if desired, a few drops of vinegar. This way, the protective cuticle is not removed too early, and the risk of contamination during storage is reduced.
