Do you find it hard to serve artichokes at home? With this recipe they will become the family’s favourite vegetable, because it’s a genuine gourmet delight. Artichokes weren’t on my list of favourite vegetables, but now they never stay out of my shopping trolley. Moreover, the recipe is so simple and tasty that whenever I take it to a dinner with friends it always goes down a treat.

And to be frank, it is such a joy to come across recipes like this, because artichokes are vegetables packed with health benefits. They’re rich in cynarin, for example, a compound that protects the liver and eases heavy digestion. They’re also a fibre-rich option, which helps keep things moving. And that’s not all: artichokes help lower cholesterol, are diuretic, have purifying properties and can even support blood sugar control thanks to their inulin content. They’re all advantages!

A Gourmet Indulgence with Artichokes

This little gourmet indulgence isn’t one of those dishes you can whip up every week, because like any treat, it has its little guilty streak. Although made at home with nourishing ingredients, there’s no need to eat it with guilt. We all deserve a sweet indulgence after a tough week! And this way, you’re also treating your body to high-quality nutrients.

What I loved most about this recipe is that, though it’s a true gourmet delight, you can recreate it with ingredients you’re likely to have at home. In fact, you only need:

  • Fresh artichokes.
  • Grated parmesan cheese.
  • Honey.
  • Lemon.
  • Black pepper.
  • Turmeric.
  • Salt.

Step by Step

Have you got all the ingredients? They’re incredibly easy to obtain! And now that you have them, we can get cracking. You’ll see these artichoke chips come together in no time.

  1. Begin by cleaning the artichokes. Remove the outer leaves and trim the stalks. Keep only the tender heart.
  2. With a knife, cut the artichokes in half. Once cut, coat them well with lemon juice to prevent browning.
  3. Continue slicing them into thin shavings, and set them aside in a container of cold water with half a lemon.
  4. In an ovenproof frying pan, add a splash of olive oil, salt, black pepper and turmeric.
  5. Add the artichoke slices to the pan and drizzle a little more oil and spices.
  6. Transfer to the oven at 200°C for 20 minutes.
  7. Remove the artichokes, sprinkle parmesan over the top. Turn the slices over and add more parmesan.
  8. Return the artichokes to the oven for another five minutes.
  9. When they’re ready, drizzle a little honey over the artichokes (this is the sweet indulgence), and enjoy!

What can you serve them with?

Although these artichokes, as they are, are a genuine gourmet treat, if you’re preparing them for a dinner party or a special occasion you can take them to another level. Here are a few ideas for serving them in different ways, depending on the moment.

  • As a starter. With a good glass of chilled white wine or a homemade ginger-lemonade, these gratin artichokes make the perfect nibble to whet the appetite and impress guests at a special dinner.
  • As a dip. If you want a more informal touch, serve them with a Greek yoghurt dip with garlic and lemon, or a avocado and lime cream. They’re sensational.
  • As a side dish. Planning to serve a roasted meat or fish? These chips replace the classic potatoes and add a sophisticated edge to the dish.
  • In a warm salad. Add the artichokes to a bed of greens, with walnuts, pomegranate and a touch of feta, and you’ll have a salad with a delightful crunch and tenderness, a true delight.
